WWTKW: 1 Year Anniversary!

Hard to believe I’ve been linking up for We Want to Know Wednesdays for a year now!  Crazy! 

Thanks to Mamarazzi for starting up the fun, to all the hostesses who have taken part over the past 365 days, and to Mamarazzi’s current co-host, Crazymama!  It was the first weekly meme I started doing, and has remained one of my favourites! :)

This week’s questions:

1. What is your favorite go to breakfast recipe for special occasions or company?
2. What is your policy for kids that don't want to eat what you are serving?
3. Do you take treats to neighbors? What kind?
4. What is your most used spice in your cupboard? (Besides salt or pepper)
5. What is your favorite fruit ? Do you have a  Fave veggie?

6. It was tax day here in the US. Did you get a return? How do you spend it?

My answers:

1. What is your favorite go to breakfast recipe for special occasions or company?  That’s a toss-up.  Pancakes have always been a favourite breakfast food of mine – quick, easy, and always a win with the kids.  BUT, my favourite special breakfast food, which I usually only get on Christmas morning, is “Wife Saver Casserole” (or, as my family calls it, “Wife Beater”).

I don’t have the recipe here, but I typed it into the ol’ Google Machine, and I think this is a very similar recipe.

Wife Saver Casserole

16 Slices White Bread, with crusts removed

6 Slices Ham (my family uses bacon; sausage is also really good)

6 Slices Sharp Cheddar Cheese (we just used grated cheese)

6 Eggs

Salt to taste

Pepper to taste

1 tsp Dry Mustard

1 cup Minced Onion

1 cup Green Pepper, finely chopped

2 tsp Worcestershire Sauce

3 cups Whole Milk

Dash of Tabasco

1/2 lb. Butter

Special K or Corn Flakes Crushed

In a 9” x 13” buttered, glass baking dish, place the 8 slices of bread. Add pieces to cover dish entirely. Cover bread with slices of sliced ham. Lay slices of cheddar cheese on top of ham and then cover with slices of bread to make it like a sandwich.

In a bowl, beat eggs, salt and pepper. To the egg mixture, add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the bread. Cover and let stand in the refrigerator overnight.

In the morning, melt the butter and pour it over top. Cover with crushed Special K or corn flakes.

Bake uncovered for 1 hour at 350F.

Let sit 10 minutes before serving.

Serves 8


2. What is your policy for kids that don't want to eat what you are serving?  Well…I don’t have kids.  And it doesn’t seem so long ago that I was one of those pick-eater kids.  (Hell, I still sort of am one.)  I can only use my experience with my niece and nephew, and I tend to be the type that aims to please.  When they’re around and I’m serving them food, I try to make them things that they like to eat – pizza, Pogos, Kraft Dinner…Of course, if they were mine and I was feeding them daily, there would be more healthy food on the menu. (let’s hope, anyways. lol)  If they don’t want to eat it?  Well, I tend to believe that if they’re hungry enough, they’ll eat eventually, so I doubt I’d offer any alternative if they don’t like what they’re being served.  Deal with it, kids.  THIS ISN’T A RESTAURANT!!! (I may have heard that a few times when I was a kid…)

3. Do you take treats to neighbors? What kind?  Not really to my neighbours, because…well…I don’t really know many of them.  And they don’t bring me treats either!!  But I do on occasion make treats to take to work – usually guacamole and chips, or nacho dip.  If I make cookies, I’ll bring them some.

4. What is your most used spice in your cupboard? (Besides salt or pepper)  I would have to say garlic powder.  I love garlic.  It doesn’t seem to matter what I’m making – I always add a bit of garlic powder.  (well, for sauces and stuff like that…not when I’m baking!! ha ha!!)

5. What is your favorite fruit ? Do you have a fave veggie?  My favourite fruit…well, that’s a toughie.  I love fruit.  The ones I buy the most are Asian pears, honeydew, kiwis, grapes, pineapple, clementines, and strawberries.  Honestly, I don’t think I could pick!

When it comes to veggies, I’m a little more picky.  In fact, there aren’t many veggies that I truly love.  I guess I’d go with carrots.  I like them raw or cooked.  And corn on the cob (but no frozen or canned corn, bleh)…yeah.  Veggies aren’t my thing.  It makes being a healthy eater a bit of a challenge for me.  I hate salad.

Probably not the healthiest way to eat a veggie, eh?

Bonus question....
6. It was tax day here in the US. Did you get a return? How do you spend it? 
I live in Canada; our taxes don’t have to be in until April 30th.  I have handed all my stuff over to my family’s financial advisor, but haven’t heard yet whether I’ll get a return or owe.  Keep your fingers crossed for me.  C’mooooon big money!!!  (I never get big money. lol)

Hope you all have a wonderful Wednesday!  And thanks to those of you who left comments yesterday, letting me know that I’m not the only person in the world who has ever lost their car.   It made me feel much better.  It probably consoled Luke, too.  He’s still not sure how it happened. ;)

That may not be the most healthy way to have corn, but it sure does taste good. Especially if the corn was grilled.

My non veggie eaters started liking a lot more since we started roasting or grilling them. Don't know what Pogos are, but what you feed your nieces and nephews sounds like what Ian likes. I have to try that casserole, I love Special K, but never thought of it as a topping.

i love my corn rubbed with a mixture of salt and chili powder rubbed on with lime. heavenly and lower calorie than butter. it's the only way i eat it. try it. it's very delicious in the summer.

um that's how i cook for my kids. i aim to cook something the majority will eat. everyone else can tough it.
